For pitchers I always like to see them from behind the catcher and from the 1st base/3rd base side depending on which arm they throw with (righties from 3B and lefties from 1B).
With hitters its tough because you can't often shoot the video from CF to get the direct on view like on TV, but the side angles that they face is always good. From behind the catcher also works as a secondary view.
I think these shots are the best way to analyze pitcher and hitter mechanics, but of course they don't tell the whole story. Ideally most of the footage would be from these side shots with a couple takes from an alternative angle.
